Hila Hochman restores the flavors of classic confections with ingredients growing in her front yard. Her sweets are a balance between a deep appreciation for vintage methods and a caring responsibility towards the knowledge we are exposed to today.
As a child she dreamt of being an alchemist in her own candy-shop, however the idea of adulthood carried different measurements for success. She dabbled back and forth between university and her kitchen, until one day she decided to stay and give her bake-house a chance.

What were once leaves of stinging nettle and peels of grapefruit zest, have now been concentrated into pâte de fruits. Tediously carved pomelo peels and wild lavender have been candied into a smile-shaped treat. The traditional french calison received new meaning, twelve times its regular size, shaped into a leaf with hints of lemon peel.
