Ki No Bi Sei Navy Strength Gin
Initially bottled for the 2017 Tokyo International Bar Show, the Kyoto Distillery's Ki No Bi Navy Strength is made with the same 11 botanicals distilled in six flavour categories as the original expression, but with the final blend tweaked to fully showcase the botanicals at the higher proof. Fun fact: Ki No Bi Navy Strength is bottled at 54.4% ABV, which was always the traditional British Navy Strength (rather than the more widely used 57%).
Ki No Tea Gin
The Kyoto Distillery, the city's first dedicated gin maker, has fast become recognised for its fastidious attention to detail. Its second release, Ki No Tea, has been meticulously created to the same exacting standards. The limited edition expression is the result of a partnership with noted tea grower and blender Hori-Shichimeien, which was founded just to the south of Kyoto in 1879. A carefully selected blend of teas, including Tencha and Gyokuro, have been added to the botanical recipe (Hinoki cypress, yuzu and juniper, among others) which imparts an intense aroma and depth of flavour. Chic, elegant and dignified.
Ki No Bi Gin
Ki No Bi Gin is the first release from the Kyoto Distillery! Unveiled in 2016, Ki No Bi Gin has been made using a rice spirit base, as well as a selection of botanicals including locally-sourced ingredients - the likes of yuzu, hinoki wood chips, bamboo leaves, green sansho and gyokuro tea. The botanicals are split into six flavour groups (Base, Citrus, Tea, Spice, Fruity & Floral and Herbal), and each group is distilled individually before being blended together. Properly incredible stuff, this.
